Key Lime Pie - Easy Recipe...

Key Lime Pie is one of the families favourites puddings to both eat and make and this recipe is so easy, even the kids can do it!  It's our take on this as we use ginger biscuits rather than digestives as I think that ginger and lime are a fabulous combination! 


In fact, it is more of a key lime cheesecake as you don't bake it in the oven so despite calling it a pie, it really is technically a cheesecake.  Either way, it is booooootiful!!!

Ingredients/You will need:

1) Two packets of ginger biscuits (this makes a lovely thick base)
2) 1 pint of double cream
3) 1 tin of sweetened condensed milk
4) 5oz butter
5) 8 large limes - Juice and Zest
6) Mixing Bowl/Blender/Spoons/Springform cake tin approx 12" (but if you only have smaller then it will make a thicker pie
7) A very helpful 2 year old (optional)

Method

1) bash your biscuits to make a base.  My beautiful assistant is doing it here, I put mine in either a clean tea towel or make a parcel out of grease proof paper.




2) Melt the butter in a large bowl (microwave is fine to melt) then add the biscuits.  Press this into your tin and put in the fridge to set whilst you make the topping.

3) Zest the limes, a really good tip is to use a cheese grater.  So much quicker than a little zester.  Put the zest to one side and juice the limes into a large bowl.  Then add the double cream and condensed milk and mix, mix, mix.  I do this until it thickens.




4)Then fold in about 3/4 of the zest and pour onto the biscuit base (make sure it has set though before doing so).

5) Chill in the fridge and sprinkle over the remainder of the zest before serving.


There you have it, a delicious and easy to make Key Lime Pie.
